摘 要:为了进一步了解茶叶水提物对黄嘌呤氧化酶活性的影响,以石阡苔茶(绿茶、红茶、黑茶)为原料,通过构建体外模型,分析茶叶水提物对体外黄嘌呤氧化酶活性的影响,结果得知:在对黄嘌呤氧化酶的活性测试中,不同茶叶水提物对黄嘌呤氧化酶的活性均有抑制作用,当质量浓度为2.5 mg/mL时,绿茶抑制率为29.53%、红茶抑制率为30.1%、黑茶抑制率为21.02%,其抑制率大小为:石阡红茶>石阡绿茶>石阡黑茶,由此可知,茶叶通过不同的处理方式其水提物抑制黄嘌呤氧化酶活性均有所不同,这为后期茶叶应用研究提供一定参考。In order to further understand the effect of tea water extract on the activity of xanthine oxidase,this paper used Shiquan moss tea(green tea,black tea,dark tea)as raw materials,and analyzed the effect of tea water extract on xanthine oxidase activity in vitro by constructing an in vitro model,and it was learned that in the activity test of xanthine oxidase,different tea water extracts had inhibitory effects on xanthine oxidase activity,and when the concentration was 2.5 mg/mL,the inhibition rate of green tea was 29.53%,and the inhibition rate of black tea was 30.1%.The inhibition rate of dark tea is 21.02%,and the inhibition rate is:Shiquan black tea>Shiquan green tea>Shiquan dark tea,which shows that tea leaves inhibit xanthine oxidase activities by water extracts through different treatment methods,which provides a certain reference for the application of tea in the later stage.
