摘 要:文章对特殊医学用途婴儿无乳糖配方食品的制备工艺进行优化。选用脂肪粉、麦芽糊精、乳清蛋白粉、复配矿物质、复配维生素、低聚果糖、花生四烯酸粉剂、二十二碳六烯酸(Docosahexaenoic Acid,DHA)藻油粉剂、核苷酸等原料,采用干法混合工艺制备特殊医学用途婴儿无乳糖配方食品,通过单因素试验和响应曲面法优化工艺参数。终产品营养素混合均匀度与干混压力、干混时间、干混频率、干混总量之间的二次回归模型为:Y=3.58-0.165A-0.11B-0.2317C-0.0333D+0.0575B+0.0975AC+0.0150AD+0.1375BC-0.05BD+0.05CD+0.3996A^(2)+0.1746B^(2)+0.8746C^(2)+0.0821D^(2)。优化后的最佳工艺条件为:干混压力0.605 MPa、干混时间6.397 min、干混频率0.354 s、干混总量56.645 kg,维生素C混合均匀度为3.568%,表明产品的混合均匀性好。采用RSM优化得到的干法工艺参数适合制备特殊医学用途婴儿无乳糖配方食品,建立的模型可以进行准确可靠预测。To optimize the preparation process of infant lactose-free formula food for special medical purposes.Fat powder,maltodextrin,whey protein powder,compound minerals,compound vitamins,oligosaccharide,arachidonic acid powder,DHA algal oil powder,nucleotides,etc.were used as raw materials to prepare infant lactose free formula food for special medical purposes by dry mixing process.The process parameters were optimized through single factor test and response surface methodology.A quadratic regression model was established between the mixing uniformity of nutrient in the final product and the dry mixing pressure,time,frequency,and total amount of dry mixing:Y=3.58-0.165A-0.11B-0.2317C-0.0333D+0.0575AB+0.0975AC+0.0150AD+0.1375BC-0.05BD+0.05CD+0.3996A^(2)+0.1746B^(2)+0.8746C^(2)+0.0821D^(2).The optimized process conditions are:dry mixing pressure 0.605 MPa,dry mixing time 6.397 min,dry mixing frequency 0.354 s,total dry mixing 56.645 kg,the average mixing uniformity of vitamin C is 3.568%,which indicated a good mixing uniformity of the product.The drying process parameters optimized by RSM are suitable for preparing infant lactose-free formula food for special medical purposes,and the established model can make accurate and reliable predictions.
