摘 要:传统工艺中利用脱胚玉米颗粒粉制糖会出现原料利用率偏低的问题,淀粉浸出率为50%左右,并且过滤困难。研究利用复合酶进行微米化预处理,攻破脱胚玉米颗粒粉制糖的技术瓶颈,打通此项技术的工艺路线,实现淀粉浸出率95%以上,并提高了过滤速度,为制糖行业提供理论依据。In the traditional process of producing sugar from de-embryonated maize grain flour,there are phenomena such as low utilization of raw materials,starch leaching rate of about 50%,and difficulty in filtration.In this paper,the micronization pretreatment was carried out by compound enzyme to break through the technical bottleneck of sugar production from de-embryonated maize grain flour,the process route of this technology was opened up,and the leaching rate of starch was over 95%,and the filtration speed was improved,which could provide theoretical basis for sugar industry.
