摘  要:研究不同产地五指毛桃产品气味物质的差异性,为五指毛桃的种植与加工提供理论依据。采用顶空-气相色谱质谱联用仪测定广东(除河源地区外)、河源、江西、广西4个地区不同来源的20组五指毛桃产品气味成分组成,结合统计软件进行聚类和主成分分析。热图和聚类分析结果表明,河源和广西的五指毛桃产品气味物质含量具有显著性差异,其中河源地区五指毛桃含丁醛、正戊醛、甲酸戊酯较高,广西地区五指毛桃含正庚酸、二戊基呋喃、壬酸较高。主成分分析将9个气味成分简化成正己醛、正庚酸、甲基丁醛3个主成分,河源和广西地区的数据在三维图中分别具有较好的相似度。河源地区五指毛桃产品与其他地区相比,气味上有显著的产地差异性,可作为产地溯源、品质控制的依据。To study the difference of odor substances in different origin and provided theoretical basis for the planting and processing of Ficus hirta Vahl.The odor composition of 20 groups of Ficus hirta Vahl.products in Guangdong,Heyuan,Jiangxi and Guangxi was analyzed by statistical software.The results showed that heatmap and cluster analysis results showed that the odor content of Ficus hirta Vahl.products between Heyuan and Guangxi,in which butyraldehyde,n-valeraldehyde and amate were higher in Heyuan,and n-heptanic acid,dipentofuran and nonacid in Guangxi.Principal component analysis simplified the nine odor components into three principal components of hexaldehyde,regular acid and methylbutyraldehyde,and the data from Heyuan and Guangxi showed good similarity in the 3 D map,respectively.Compared with other regions,Ficus hirta Vahl.products in Heyuan area had significant origin differences in smell,which could be used as the basis for origin traceability and quality control.
