摘  要:采用不同载气的冷等离子体处理玉米醇溶蛋白(zein)后包封原花青素(PC),制备复合纳米颗粒,并对其进行表征和性能研究。结果表明,经冷等离子体处理后的玉米醇溶蛋白纳米颗粒的粒径和多分散系数PDI无显著变化,而Zeta电位的绝对值显著降低;以O_(2)+Ar为载气的冷等离子体处理的复合纳米颗粒PZOA的包封率达到90.59%,显著高于以NH_(3)为载气的冷等离子体处理的复合纳米颗粒PZN(62.66%);圆二色谱分析表明,包封PC后的复合纳米颗粒的二级结构发生了变化,表明PC的加入影响了玉米醇溶蛋白的结构特征;包封PC后的复合纳米颗粒的抗氧化活性显著提高,自由基清除率由未包封的54.43%~56.03%上升至88.41%~90.29%。We prepared the zein-proanthocyanidin composite nanoparticles by encapsulating proanthocyanidins(PC)with zein treated by cold plasma with different carrier gases,characterized their structures,and studied their performances.The results show that,the particle size and polydispersity index(PDI)of zein nanoparticles treated by cold plasma have a negligible change,while the absolute value of Zeta potential decreases significantly.The encapsulation rate of PZOA treated by cold plasma with O_(2)+Ar as a carrier gas reaches 90.59%,significantly higher than that of PZN treated by cold plasma with NH_(3) as a carrier gas(62.66%).Circular dichroism analysis shows that the secondary structure of the composite nanoparticles encapsulated with PC changes,indicating that the addition of PC affects the structural characteristics of zein.The antioxidant activity of the composite nanoparticles encapsulated with PC improves significantly,and the free radical scavenging rate increases from 54.43%-56.03%to 88.41%-90.29%.
