摘　　要：白酒的鉴别对于白酒行业的健康发展及保护消费者的权益至关重要。传统的白酒鉴别方法主要依据品酒师的主观判断或者防伪标识进行鉴别,鉴别结果存在诸多不确定性;而现代分析技术为白酒科学、准确地鉴别提供的强有力的技术保障。本文综述了现代分析技术在白酒鉴别研究中的最新成果,总结了不同技术的优缺点并讨论了现代分析技术在白酒鉴别中的潜在机遇和挑战,为白酒鉴别研究提供参考。The identification of Baijiu is very important for the healthy development of Baijiu industry and the protection of consumers'rights and interests.The traditional identification methods of Baijiu are mainly based on the subjective judgment of connoisseur or anti-counterfeiting marks,and there are many uncertainties in the identification results.Modern analytical technology provides a powerful technical guarantee for scientific and accurate identification of Baijiu.In this paper,we review the latest achievements of modern analytical techniques in the identification of Baijiu,and summarize the advantages and disadvantages of different techniques,and discusse the potential opportunities and challenges of modern analytical techniques in the identification of Baijiu,providing a reference for the identification of Baijiu.
