摘  要:为探究不同顶空残氧量对瓶装全营养乳敏感营养素的影响,通过制备不同顶空残氧量全营养乳样品,将其置于30℃下加速贮藏,分析不同顶空残氧量样品亚油酸、α-亚麻酸及维生素A、D、E、K、B_(1)、B_(2)、B_(6)、B_(12)、维生素C、生物素、烟酸和叶酸的货架期衰减率变化,为全营养乳充氮工艺提供指导。结果表明,降低全营养乳顶空残氧量可以减少部分敏感维生素损失。本产品中,参考各营养素加速贮藏6个月内衰减率结果,将残氧量控制在10%以下,能有效减少残氧量对营养素衰减的影响。To investigate the effect of different headspace residual oxygen levels on the sensitive nutrients of bottled total nutrient milk,samples of total nutrient milk with different head space residual oxygen were prepared and stored at 30℃for accelerated storage.The changes of shelf life decay rates of linoleic acid,Alpha linolenic acid and vitamins A,D,E,K,B_(1),B_(2),B_(6),B_(12),vitamin C,biotin,niacin and folic acid in different headspace residual oxygen samples were analyzed to provide guidance for nitrogen filling process of total nutrient milk.The results showed that reducing the residual oxygen in the total nutrient milk could reduce the loss of sensitive vitamins.In this product,according to the results of the decay rate of each nutrient within 6 months of accelerated storage,the residual oxygen is controlled below 10%,which can effectively reduce the effect of residual oxygen on nutrient attenuation.
