摘 要:小麦是我国第2大主粮作物,除用于制作食品外,制曲酿酒、石油化工等轻重工业消费也是重要的应用领域。随着社会的发展,小麦消费结构也在不断改变,多样化的产业需求促进了小麦品种迭代更新,供给侧的小麦生产改革升级对保障我国粮食安全和市场需求具有重要作用。基于我国小麦生产应用现状,总结了制曲用小麦的特点和要求,分析了当前市场上主要制曲小麦的优缺点,并对今后制曲小麦的多样性育种研究进行了探讨。Wheat is the second largest staple crop in China.In addition to food production,the consumption of light and heavy industries such as koji-making,wine-making and petrochemical industry is also an important application direction.With the development of society,the consumption structure of wheat is also changing,and the diversified industrial demand also promotes the iterative update of wheat varieties.The reform and upgrading of wheat production on the supply side plays an important role in ensuring China’s food security and market demand.This paper expounds the current situation of wheat production and application in China,summarizes the characteristics and requirements of koji-making wheat,analyzes the advantages and disadvantages of the main koji-making wheat in the current market,and discusses the diversity breeding of koji-making wheat in the future.
