摘  要:食品掺假危害性不容小觑,为了有效识别和打击食品掺假行为,各国都在积极寻找先进、可靠的食品检测技术;其中,液相色谱质谱技术以其高灵敏度、高选择性和多组分同时分析能力在食品掺假检测领域展现出巨大的应用潜力。本文重点探讨了液相色谱质谱技术在食品掺假检测中的应用现状及局限性,旨在为食品安全监管部门和相关研究人员提供参考。Food adulteration is a common problem,and its harm can not be underestimated.In order to effectively identify and combat food adulteration behavior,all countries are actively looking for advanced and reliable food detection technology.Among them,liquid chromatography-mass spectrometry technology,with its high sensitivity,high selectivity and multicomponent simultaneous analysis ability,shows great application potential in the field of food adulteration detection.This paper focuses on the application status and limitations of liquid chromatography-mass spectrometry in the detection of food adulteration,in order to provide references for food safety supervision departments and relevant researchers.
