摘 要:随着全球冷链物流的快速发展,相变蓄冷技术在冷链物流上具有应用前景。选用十四烷为相变材料,聚山梨酯(吐温80)和山梨醇酐单油酸酯(司班80)作乳化剂,通过高速剪切均质法制备了一种相变蓄冷乳液。考察了不同HLB、乳化剂含量、相变材料含量、剪切速率和乳化时间等因素对相变乳液性能的影响。结果表明:最佳制备条件为HLB为12、乳化剂质量含量为8%、相变材料质量含量为20%、剪切速率为18000r/m和乳化时间为10min,此时,乳液静置30d未出现分层或破乳,冻融循环20次后仍未分层,具有较好的稳定性;在室温下,测得该乳液的黏度为3.89mPa·s,导热系数为0.5740W/(m·K),过冷度为0.94℃,符合冷链运输的需求。As global cold chain logistics continue to expand rapidly,the application of phase change cold storage technologies is increasingly promising.In this work,tetradecane was selected as the phase change material,polysorbate(Tween 80)and sorbitan monooleate(Span 80)as emulsifiers were employed to prepare a phase change cold storage emulsion by high-speed shear homogenization method.The effects of different HLB values,emulsifier contents,phase change material contents,shear rates and emulsification times on the properties of the phase change emulsion were investigated.The results showed that the optimal preparation conditions were an HLB value of 12,emulsifier content of 8%,phase change material content of 20%,shear rate of 18000 rpm,and emulsification period of 10 minutes.Under these conditions,the emulsion kept a good stability without stratification after 30 days of resting and 20 times of freeze-thaw cycles.At room temperature,the viscosity of the emulsion was 3.89mPa·s,the thermal conductivity was 0.5740W/(m·K),and the degree of supercooling was 0.94℃,meeting the requirements of cold chain transportation.
