广州市居民反式脂肪酸食物消费状况的知信行调查及影响因素分析

摘  要:目的了解广州市居民对反式脂肪酸(trans-fatty acids)的知识、态度和行为(the Knowledge,Attitude and Practice,KAP)状况,为今后开展高效的健康教育活动提供科学依据。方法采用网络问卷调查的方式收集2382份18~60岁广州市居民关于反式脂肪酸食物消费情况调查的问卷。数据分析采用统计描述、t检验和多元线性回归法。结果本次调查结果显示,知识得分率54.7%,态度得分率为72.6%,行为得分率为67.8%,KAP总体得分率62.7%。单因素分析结果显示,性别、年龄、BMI、学历、职业、月消费水平对广州市居民TFAs的KAP总分的影响差异均具有统计学意义(P均<0.05),多因素分析结果显示,性别、年龄、BMI、文化程度、职业、月消费水平均为广州市居民对TFAs的KAP得分总分的影响因素(P均<0.05)。广州市居民对TFAs相关知识主要来源于社会科普宣传讲座或活动、各种应用软件搜索或推送(如浏览器、小红书、知乎、微信、抖音、快手等)、电视广播,分别占56.3%、48.2%、39.8%,43.9%的居民在购买食品时会关注营养标签。结论广州市居民对于含TFAs食品及营养成分的知晓率较低,态度和行为不成正比。应该结合岭南膳食模式,利用多渠道有针对性地开展TFAs营养知识的宣传科普,提高对TFAs食品的知晓率,增强消费者使用营养标签的意识,减少居民对含TFAs食品的摄入。Objective To investigate the knowledge,attitude and practice(KAP)of trans-fatty acids(TFAs)among residents in Guangzhou,and to provide a scientific basis for effective health education activities in the future.Methods An online questionnaire survey was conducted among 2832 residents aged 18-60 years in Guangzhou City.Statistical description,t-test and multiple linear regression were used for data analysis.Results The results of this survey showed that the score rate of knowledge was 54.7%,the score rate of attitude was 72.6%,the score rate of practice was67.8%,and the overall score rate of KAP was 62.7%.Univariate analysis showed that gender,age,BMI,education,occupation and monthly consumption level had statistically significant effects on the total score of TFAs KAP(all P<0.05).Multivariate analysis showed that:gender,age,BMI,education,occupation and monthly consumption level were the influencing factors of the total score of TFAs KAP among Guangzhou residents(all P<0.05).Guangzhou residents'knowledge of TFAs mainly came from social science publicity lectures or activities,search or push of various application software(such as browser,Xiaohongbook,Zhihu,Wechat,TikTok,Kuaishou,etc.),and TV broadcast,accounting for56.3%,48.2%,39.8%,respectively.43.9%of residents would pay attention to nutrition labels when buying food.Conclusion The awareness rate of food containing TFAs and its nutritional ingredients among residents in Guangzhou City is low,and the attitude and practice are not proportional to each other.Combined with the contents of cantonese dietary pattern,multiple channels should be used to carry out targeted publicity and popularization of TFAs nutrition knowledge,improve the awareness rate of TFAs food,enhance consumers'awareness of using nutrition labels,and reduce residents'intake of food containing TFAs.
