基于可达性评价的“外卖工厂”内部空间分布及其影响因素分析——以广州市石牌村为例

摘　　要：移动互联网时代,外卖产业的集聚形成“外卖工厂”这一城市新空间。结合田野调查及对店铺经营者和外卖骑手的访谈,引入可达性指标,深入分析广州市石牌村“外卖工厂”内部纯外卖店铺的渗入程度与空间特征。研究结果表明:在集聚形态与区位偏好方面,纯外卖店铺与传统堂食餐饮店铺存在较大差异,呈现出团状均质、深入街巷的空间布局特征;在可达性方面,纯外卖店铺更倾向于选择可达性一般的区位,可达性好与可达性差的区域均少有纯外卖店铺集聚。综合考虑店铺经营与骑手配送两方面影响因素,文中指出随着可达性降低、店铺租金成本降低的同时,骑手配送时间成本相应增加,纯外卖店铺向地块内部的渗透程度取决于两者的最优化均衡。In the era of mobile Internet,the aggregation of takeaway industry forms a new urban space called “Takeaway Factory”.Combining fieldwork and interviews with shop operators and takeaway riders,this study introduces accessibility indicators to analyze the degree of penetration and spatial characteristics of takeaway shops within the “Takeaway Factory” in Shipai Village,Guangzhou.The results of the study show that:in terms of aggregation pattern and location preference,there are significant differences between takeaway shops and traditional dine-in restaurants,presenting the spatial layout characteristics of homogeneous clustering and a tendency to penetrate deeply into the streets and lanes;in terms of accessibility,takeaway shops are more inclined to choose locations with average accessibility,and there are few takeaway shops in areas with either the best or the worst accessibility.Considering the influencing factors of shop operation and rider delivery,it is pointed out that as accessibility decreases,the rental cost of shops decreases while the time cost of rider delivery increases,and the extent to which takeaway shops penetrate into the interior of plots depends on the optimal balance between the two factors.
