摘 要:温伦胶和黄原胶均属于阴离子生物多糖,都具有假塑性流体特性和相似的外观。温伦胶有优于黄原胶的性能和远高于黄原胶的价格,规范市场应用和鉴别两种生物多糖就显得必要和重要。本文利用红外光谱结合二阶导数谱对黄原胶与温伦胶进行区分。结果显示,两种生物多糖红外光谱整体相似,在3200~1600 cm^(-1)的二阶导数谱中,在2978 cm^(-1)附近温伦胶存在明显的吸收峰而黄原胶不存在,该吸收峰归属于温伦胶分子独有鼠李糖甲基产生的吸收峰。利用红外谱图微小差异区分两种生物多糖,其结果与利用高温流变仪获取两种生物多糖粘温性的判定结果相一致,但操作过程简单而快速。Both Welan Gum and Xanthan Gum belong to anionic biological polysaccharides,which have pseudoplastic fluid characteristics and similar appearance.Welan Gum has better performance than Xanthan Gum and much higher price than Xanthan Gum.It is necessary and important to standardize the market application and identify the two polysaccharides.In this paper,infrared spectroscopy combined with second derivative was used to identified Xanthan Gum and Welan Gum.The results showed that the two types of polysaccharide s infrared spectra were largely identical.In the second derivative spectra of 3200 to 1600 cm^(-1),there was an obvious absorption peak near 2978 cm^(-1)for Welan Gum,while Xanthan Gum did not exist.The stretching vibration of the methyl group on the rhamnose in the chemical structure of Welan Gum was responsible for this peak.Welan Gum and Xanthan Gum were differentiated using the slight variation in their infrared spectra,and the results were in line with those of the high temperature rheometer used to measure the viscosity and temperature properties of the two types of biological polysaccharides,but the procedure of operation was quick and easy.
