摘  要:文章旨在研究大麦秸秆(Barley Straw,BS)对育肥羊生长性能、屠宰性能及肉品质的影响。试验选择120只健康无病,初重和月龄相近的育肥羊,随机分为4组,各组育肥羊均参考《肉羊营养需要量》(NY/T 816-2021)饲喂全混合日粮。其中以玉米秸秆(Corn Straw,CS)粗饲料作为对照(CS组),其余3组分别用33.33%(LBS组)、66.67%(MBS组)、100%(HBS组)大麦秸秆替代粗饲料中的玉米秸秆,每组3个重复,每个重复10只。试验为期30 d。结果表明:(1)与CS组相比,MBS组平均日增重显著提高11.86%(P<0.05),料重比显著降低9.87%(P<0.05)。虽然LBS组平均日增重高于CS组,料重比低于CS组,但无组间差异(P>0.05)。(2)与CS组相比,MBS组屠宰率、眼肌面积显著提高(P<0.05);LBS组眼肌面积显著提高(P<0.05)。(3)以不同水平大麦秸秆替代粗饲料中的玉米秸秆对pH、滴水损失、亮度L~*、红度a~*、黄度b~*无显著影响(P>0.05)。由此可见,在本试验条件下,以大麦秸秆替代粗饲料中的玉米秸秆对育肥羊肉品质无负面影响,大麦秸秆替代水平为66.67%时提高了育肥羊的生长性能和屠宰性能。To investigate the effects of Barley Straw(BS)on the growth performance,slaughter performance,and meat quality of fattening sheep.120 healthy and disease-free fattening sheep with similar initial weight and age were selected and randomly divided into 4 groups.The fattening sheep in each group were fed with a full mixed diet according to the Nutrient Requirements for Meat Sheep(NY/T 816-2021).Among them,corn straw(CS)roughage was used as the control(CS group),while the other three groups were replaced with 33.33%(LBS group),66.67%(MBS group),and 100%(HBS group)barley straw in the roughage.Each group had 3 replicates,with 10 rats in each replicate.The experimental period is 30 days.The results showed that:(1)Compared with the CS group,the average daily weight gain of the MBS group was significantly increased by 11.86%(P<0.05),and the feed to weight ratio was significantly reduced by 9.87%(P<0.05).Although the average daily weight gain of the LBS group was higher than that of the CS group and the feed to weight ratio was lower than that of the CS group,there was no intergroup difference(P>0.05).(2)Compared with the CS group,the MBS group showed a significant increase in slaughter rate and eye muscle area(P<0.05);The LBS group showed a significant increase in eye muscle area(P<0.05).(3)Replacing corn straw with different levels of barley straw in roughage had no significant effects on pH value,drip loss,brightness L*,redness a*,and yellowing b*(P>0.05).From this,it can be seen that under the conditions of this experiment,replacing corn straw in roughage with barley straw has no negative impact on the quality of fattening sheep meat.When the substitution level of barley straw is 66.67%,it improves the growth performance and slaughter performance of fattening sheep.
