摘 要:文章对元代制盐典籍《熬波图》的制盐工艺做了初步研究,按照工艺流程分别对团城建设、摊场建设、淋卤和煮盐四个环节进行了梳理与辨析。研究表明,此书记录的宋元时期制盐工艺已达到了比较精密的阶段,海盐生产已经走向成熟化和专业化,海盐业已经是由官府主导推动的密集型工场化行业。《熬波图》作为我国现存年代最早、记录最系统详细的古代制盐典籍,其重要的学术价值无可替代,有关盐业史研究和海盐考古工作应充分重视此书。This article presents a preliminary study of the salt production process described in saltmaking classic Aobo Tu of Yuan Dynasty.The study organizes and analyzes four key stages of the process:the construction of the salt-making site,the establishment of the salt flats,the brine soaking and the salt boiling.Research indicates that the salt production techniques recorded in Aobo Tu during the Song and Yuan dynasties had reached a relatively sophisticated stage,with the production of sea salt becoming mature and specialized.The sea salt industry had evolved into an intensive and factory-based sector driven predominantly by government initiatives.As the earliest existing and most systematically detailed ancient salt-making classic in China,Aobo Tu holds irreplaceable academic value.It is essential for scholars of salt industry history and coastal salt archaeology to give full attention to this work.
