摘  要:肌细胞(又名肌纤维)是组成骨骼肌的基本单位,约占畜禽机体的50%左右,与畜禽产肉性能、骨骼保护密切相关,对调节畜禽机体代谢和内分泌有重要作用,同时也为畜禽的运动提供了动力。骨骼肌是一种较为复杂的组织,而组成这些组织的基本单位是肌细胞,骨骼肌在发育时期需要多种类型的单核和多核细胞相互作用,这是形成优质肉类的关键。近些年,随着科学技术的快速发展,对鉴定骨骼肌发育相关细胞有了更多且全面的技术,而单细胞测序技术在其中运用的最为广泛,它的运用对组成骨骼肌的细胞类型和相关细胞发育异质性的研究提供了技术支持,对肉品质的研究有重大意义。本文综述了通过细胞形态学观察、分子标记物、免疫组织化学、免疫荧光、原位杂交、单细胞测序的方法鉴定与骨骼肌发育过程相关的细胞,归纳与骨骼肌发育相关细胞的标记基因,为了解骨骼肌的结构和功能,为探索骨骼肌发育机制提供参考,为肉品质的研究提供理论基础,也在不同品种的个体选育中具有重要意义和实践价值。Muscle cells(also known as muscle fibers)are the basic unit of skeletal muscle,accounting for about 50%of the body of livestock and poultry,and are closely related to meat production performance and bone protection of livestock and poultry.They play an important role in regulating the metabolism and endocrine of livestock and poultry,and also provide power for the movement of livestock and poultry.Skeletal muscle is a relatively complex tissue,and the basic unit of these tissues are muscle cells.Skeletal muscle requires a variety of types of mononuclear and multinucleated cells to interact during development,which is the key to the formation of high-quality meat.In recent years,with the rapid development of science and technology,there are more and more comprehensive techniques for identifying skeletal muscle development-related cells,and single cell sequencing technology is most widely used.Its application provides technical support for the study of cell types and related cell development heterogeneity of skeletal muscle,and is of great significance for the study of meat quality.This paper reviews the identification of cells related to skeletal muscle development by cell morphology observation,molecular markers,immunohistochemistry,immunofluorescence,in situ hybridization,and single cell sequencing,and summarizes the marker genes of cells related to skeletal muscle development,in order to understand the structure and function of skeletal muscle.It provides a reference for exploring the mechanism of skeletal muscle development,provides a theoretical basis for the study of meat quality,and also has important significance and practical value in individual breeding of different varieties.
