摘　　要：牛肉汤作为淮南地方名吃,在推动地方经济转型中起到一定作用。文章运用SWOT-AHP模型分析淮南牛肉汤产业发展的优势、劣势、机遇、挑战。研究表明,淮南牛肉汤产业发展的机遇>优势>挑战>劣势。同时,通过四象限坐标法分析,提出淮南牛肉汤产业高质量发展应采取积极的增长型发展战略,要加大政策扶持,促进行业内产业展开多元化合作;创新经营管理模式,走品牌化发展道路;挖掘文化内涵,强化宣传营销力度;重视传统工艺保护,完善工艺技术和专业人才队伍建设;加快制作技术的智能化转型。Beef soup,a renowned local food in Huainan,plays a significant role in the region’s economic transformation.The article employs the SWOT-AHP model to analyze the strengths,weaknesses,opportunities,and challenges of the development of the Huainan beef soup industry.The study indicates that the opportunities in the development of the Huainan beef soup industry outweigh its strengths,which in turn surpass the challenges and weaknesses.Concurrently,through the analysis using the quadrant coordinate method,it is proposed that the high-quality development of the Huainan beef soup industry should adopt a proactive growth-oriented development strategy.This includes increasing policy support to foster diversified cooperation within the industry;innovating business management models to pursue a path of brand development;exploring cultural connotations to enhance promotional marketing efforts;valuing the protection of traditional craftsmanship and improving technological processes and the construction of professional talent teams;and accelerating the intelligent transformation of production techniques.
