摘 要:【目的】探明不同浓度硒溶液浸种对花生种子萌发及其生理生化指标的影响,明确促进花生种子萌发的适宜浓度,为生产富硒花生芽菜提供理论依据。【方法】分别用0μmol/L(CK)、2.5μmol/L、5.0μmol/L、7.5μmol/L和10.0μmol/L亚硒酸钠(Na_(2)SeO_(3))溶液浸泡花生种子12 h,分析不同硒浓度下花生种子的萌发能力与生理生化指标(可溶性糖、可溶性蛋白、还原型谷胱甘肽和丙二醛含量以及超氧化物歧化酶、过氧化物酶、脂肪酶和淀粉酶活性)的变化。【结果】与CK相比,7.5μmol/L亚硒酸钠溶液处理花生种子后,发芽率提高15.66个百分点,差异显著(P<0.05);花生种子在发芽48 h生理生化指标变化明显,其中,脂肪酶和淀粉酶活性分别显著提高25.00%和34.53%,可溶性糖和可溶性蛋白含量分别显著提高23.75%和19.17%,超氧化物歧化酶和过氧化物酶活性分别显著提高23.69%和23.71%,还原型谷胱甘肽含量显著提高23.92%,但丙二醛含量显著降低26.93%。【结论】7.5μmol/L Na_(2)SeO_(3)浸种能显著提高花生种子发芽率,显著提高发芽48 h的可溶性糖、可溶性蛋白和还原型谷胱甘肽含量以及超氧化物歧化酶、过氧化物酶、脂肪酶和淀粉酶活性,显著降低丙二醛含量。【Objective】The effects of different concentrations of selenium solution on the germination,physiological and biochemical indicators of peanut seeds were explored,and the appropriate concentration to promote the germination of peanut seeds was clarified,so as to provide a theoretical basis for the production of selenium-rich peanut sprouts.【Method】Peanut seeds were soaked in 0 μmol/L(CK),2.5 μmol/L,5.0 μmol/L,7.5 μmol/L and 10.0 μmol/L sodium selenite solutions for 12 hours.The germination ability and physiological and biochemical indicators(soluble sugar,soluble protein,reduced glutathione,MDA content,as well as SOD,POD,lipase and amylase activity) of peanut seeds were analyzed under different selenium concentrations.【Result】Compared with CK,the treatment of peanut seeds with 7.5 μmol/L sodium selenite solution significantly increased the germination rate of peanut seeds by 15.66 percent points and was significantly different from other treatments(P<0.05).Peanut seeds had obvious changes in the physiological and biochemical indicators during 48 hours of germination.The activities of lipase and amylase increased by 25.00%and 34.53%,respectively,while the concentrations of soluble sugar and soluble protein increased by 23.75% and 19.17%.The activities of SOD and POD increased by 23.69% and 23.71%,respectively.The concentrations of reduced glutathione increased by 23.92%,while MDA decreased by 26.93%.【Conclusion】Soaking peanut seeds with 7.5 μmol/L Na_(2)SeO_(3) can significantly increase the germination rate,improve the soluble sugar,soluble protein,glutathione concentrations,SOD,POD,lipase and amylase activities during 48 hours of germination,while reduce the concentration of MDA content.
