摘  要:本试验对21个不同强筋小麦品种的品质性状进行测定分析。结果表明:参试品种的各个品质性状间差异丰富:水分含量与蛋白质含量、湿面筋含量、籽粒硬度呈极显著正相关,与干基淀粉含量呈极显著负相关,与沉降值呈显著正相关;蛋白质含量与干基淀粉含量呈极显著负相关,与湿面筋含量、籽粒硬度、沉降值呈极显著正相关;湿面筋含量与籽粒硬度呈极显著正相关,与干基淀粉含量呈极显著负相关,与沉降值呈显著正相关;籽粒硬度与干基淀粉含量呈极显著负相关,与沉降值呈极显著正相关;干基淀粉含量与沉降值呈极显著负相关。另外,通过对全部品种各项指标筛选并结合小麦品种品质分类中华人民共和国国家标准,郑麦583、郑麦369、郑麦101、郑麦9023、天民369、宁麦13这6个品种在强筋小麦品质性状分析中表现突出。The quality characters of 21 varieties of strong gluten wheat were determined and analyzed in this experiment.The results showed that there were abundant differences among the quality characters of the tested varieties.Water content was positively correlated with protein content,wet gluten content and grain hardness,negatively correlated with dry starch content and positively correlated with sedimentation value.Protein content was negatively correlated with dry starch content,and positively correlated with wet gluten content,grain hardness and settling value.The content of wet gluten was positively correlated with grain hardness,negatively correlated with dry starch content,and positively correlated with settling value.Grain hardness was negatively correlated with dry starch content and positively correlated with settlement value.The content of dry base starch was negatively correlated with the sedimentation value.In addition,through the selection of all varieties and combined with the national standard of wheat variety quality classification of the Peoples Republic of China,Zhengmai 583,Zhengmai 369,Zhengmai 101,Zhengmai 9023,Tianmin 369,Ningmai 13 were outstanding in the analysis of strong gluten wheat quality traits.
