摘　　要：目的研究当归油微囊的制备,筛选出最佳的制备工艺并对其进行质量评价。方法以明胶和阿拉伯胶液为囊材,通过复凝聚法制备当归挥发油微囊,以包封率为考察指标,采用Box-Behnken响应面法优化制备工艺并进行验证,通过外观、显微、电镜、粒径等多方面对其进行质量评价。结果明胶液浓度3%,阿拉伯胶液浓度1%,挥发油与囊材比例30%,复凝聚反应pH值为4.2,成囊温度40℃,搅拌速度为600 r·min^(-1),加入固化剂5 mL,固化30 min时包封率最高为85.62%,以最优工艺制成的微囊质量良好。结论以最优工艺制得的当归油微囊粒径均匀,工艺稳定,包封率好,且该方法操作简便,为当归挥发油的开发和应用提供了一定的参考。Objective To study the preparation of Danggui(Angelicae Sinensis Radix)oil microcapsules,screening out the best preparation process and quality evaluation.Methods The microcapsules of volatile oil from Danggui(Angelicae Sinensis Radix)were prepared by complex coacervation method with gelatin and gum arabic solution as the materials.Tts quality evaluation was carried out through the appearance,microscopy,electron microscopy,particle size and other aspects.Results When the concentration of gelatin solution was 3%,the concentration of arabic gum solution was 1%,the proportion of volatile oil to bladder material was 30%,the pH value of complex coacervation reaction was 4.2,the temperature of bladder formation was 40℃,the stirring speed was 600 r·min^(-1),adding curing agent(5 mL)and curing for 30 min,the encapsulation efficiency was the highest(85.62%).The microcapsules made by the optimal technology had good quality.Conclusion The microcapsules of Danggui(Angelicae Sinensis Radix)oil prepared by the optimal process have uniform particle size,stable process and good entrapment efficiency.
