系统性保护视野下非遗的可持续传承发展——以高明濑粉为例

摘　　要：高明濑粉作为一种具有地方特色的米粉制品,不只是一种日常食物,也是一种传统技艺,更是一种民间食俗。高明濑粉经历了由家庭代际传承向店铺师徒传承的模式转变,市场化开发程度较高,生产性保护效果显著,其文旅融合发展也得到积极推进,但也面临着展示空间受限、认可度不足等发展困境。为了推动高明濑粉的可持续发展,需要以系统性保护为指导思想,树立人本化发展、区域性整体保护和生活性保护理念,采用生态化保护、教育化传承、精品化发展、资源化开发和数字化传播等五种策略,为高明濑粉相关文化和产业的发展注入新动力。As a kind of rice noodles product with local characteristics,Gaoming rice noodles is not only a kind of daily food,but also a kind of traditional skill and a kind of food custom.Gaoming rice noodles has experienced a transformation from intergenerational family inheritance to mentorship in stores,with a high degree of market-oriented development and significant productive protection effects.Its integration of cultural and tourism has also been acctively promoted.But at the same time,it is also faced with the development predicament of the shaping of diversified diet,the decline of traditional cultural environment and the impact of modern lifestyle.In order to promote the sustainable development of Gaoming rice noodles,we need to take systematic protection as the guiding ideology,establish the concepts of humanistic development,regional integrity protection,and livelihood protection,and adopt five strategies including ecological protection,educational inheritance,boutique development,market-oriented development,and digital dissemination to inject new impetus into the development of the culture and related industries associated with Gaoming rice noodles.
