摘 要:膨大剂可显著提高果实体积及产量,在种植业被广泛使用,但过量施用会造成果实硬度下降、风味变酸、易腐烂,不耐贮藏、食品安全等众多问题,急需开发绿色替代农用制剂。壳寡糖是壳聚糖酶法降解后获得聚合度为2~20的氨基葡萄糖寡聚物,具有免疫诱抗、促生长、果蔬保鲜等多种生物活性,作为绿色农用制剂已在农业领域被广泛应用。为了减少猕猴桃种植中膨大剂的使用量,探讨了壳寡糖替代不同施用量膨大剂对猕猴桃品质的影响,结果发现,使用壳寡糖可在不降低果实体积及产量的基础上,显著增加猕猴桃中总糖和维C含量,进而提高其食用价值。由此可见,使用壳寡糖减少膨大剂的用量不仅可降低农药残留带来的众多问题,还可提高猕猴桃的品质。Fruit-expanders are widely used in agriculture to significantly increase fruit size and yield.However,excessive use of fruit-expanders can lead to issues such as decreased fruit firmness,sour taste,susceptibility to rot,and food safety concerns.There is an urgent need to develop green alternatives for agricultural applications.Chito-oligosaccharides are oligomers of amino glucose with a polymerization degree of 2~20,obtained through the enzymatic degradation of chitosan.They possess various biological activities,including immune induction,growth promotion,and preservation of fruits and vegetables.As a green agricultural agent,chito-oligosaccharides have been widely applied in the agricultural field.In this study,we aimed to reduce the use of fruit-expanders in kiwifruit cultivation and investigate the effects of chito-oligosaccharides as a substitute for fruit-expanders on kiwifruit quality.The results showed that the use of chito-oligosaccharides significantly increased the total sugar and Vitamin C content in kiwifruit without reducing fruit size and yield,thereby enhancing its edible value.Therefore,using chito-oligosaccharides to reduce the amount of fruit-expanders not only helped mitigate the issues associated with pesticide residues but also improved the quality of kiwifruit.
