摘　　要：在我国畜牧业中,随着严禁使用抗生素政策的实施,生物饲料已成为替抗饲料的主力选择。发酵饲料作为生物饲料的重要分支,在提升动物生产性能方面发挥着关键作用。其不仅能提高饲料营养价值,保持肠道内微生态的均衡,同时也有助于增强动物的消化能力。此外,发酵饲料还能介导动物机体特异性和非特异性免疫,从多方面增强动物免疫力。同时,发酵饲料还具备绿色、安全、无残留等一系列优点,有效减轻了养殖业对环境的危害。文章对发酵菌的分类、发酵工艺、发酵饲料的应用以及当前发酵饲料面临的问题进行综述,以期为该领域的研究和应用提供参考。In China's animal husbandry,with the implementation of the policy of banning antibiotics,biological feed has become the main choice of antibiotic feed.As an important part of biological feed,fermented feed plays a key role in improving animal performance.It can not only improve the nutritional value of feed,maintain the balance of intestinal flora,but also improve the digestive ability of animals.In addition,fermented feed can also mediate specific and nonspecific immunity in animal body,enhancing animal immunity in many aspects.At the same time,fermented feed also has a series of advantages such as green,safe and no residue,effectively reducing the harm of breeding industry to the environment.This paper will review the classification,fermentation process,application of fermented feed and the current problems facing fermented feed,in order to provide reference for research and application in this field.
