摘 要:试验旨在研究小麦-豆粕型饲粮中添加复合酶、大豆异黄酮、复合益生菌与酵母培养物对快速型黄羽肉鸡生长性能、屠宰性能和肉品质的影响。选用1080只1日龄快速型黄羽肉公鸡,随机分为6个处理组,每个处理组6个重复,每个重复30只鸡。第1组是小麦-豆粕型饲粮组(小麦组),第2组是在第1组基础上添加6000 IU/kg复合酶(复合酶组),第3~5组分别是在第2组基础上添加300 mg/kg大豆异黄酮(大豆异黄酮组)、200 mg/kg复合益生菌(益生菌组)、300 mg/kg酵母培养物(酵母组),第6组为玉米-豆粕饲粮组(玉米组),试验期42 d。结果表明,与小麦组相比,复合酶组显著降低了36~42日龄和1~42日龄平均日采食量(P<0.05),但对肉鸡屠宰性能、肉品质和血浆生化指标均无显著影响(P>0.05)。与复合酶组相比,大豆异黄酮组、益生菌组、酵母组显著提高了42日龄肉鸡胸肌率(P<0.05),显著降低了肌肉的滴水损失(P<0.05)和血浆中丙二醛(MDA)含量(P<0.05);益生菌组显著提高了肉鸡42日龄体重和屠宰率、36~42日龄和1~42日龄平均日增重(P<0.05),显著降低了1~42日龄料重比(P<0.05);酵母组显著降低了1~42日龄料重比(P<0.05)。与玉米组相比,小麦型饲粮各组肉鸡血浆中MDA含量与肌肉肉色的b^(*)值和剪切力显著降低(P<0.05),pH24 h显著提高(P<0.05);复合酶组和益生菌组对1~42日龄肉鸡的生长性能均无显著差异(P>0.05),但显著提高了42日龄肉鸡的屠宰率(P<0.05)。综上所述,黄羽肉鸡小麦型饲粮中同时添加复合酶和复合益生菌或酵母培养物均可以显著改善小麦型饲粮肉鸡的生长性能、屠宰性能和肉品质。快速型黄羽肉鸡小麦型饲粮中同时添加复合酶或复合益生菌可完全替代玉米型饲粮应用于生产。This experiment was to investigate the effects of complex enzymes(CE),soybean isoflavones(ISO),compound probiotics(CPs)and yeast culture(YC)added in wheat-soybean meal diet on growth performance,slaughter performance and meat quality of male rapidly-growing Yellow-feathered chickens.A total of 10801-day-old male rapidly-growing Yellow-feathered chickens were randomly divided into 6 groups with 6 replicates per group and 30 birds per replicate.The first group was the wheat-soybean meal diet group(wheat group),and the second group was supplemented with 6000 IU/kg wheat diet specific CE(CE group)on the basis of the first group.Group 3-5 were supplemented with 300 mg/kg ISO(ISO group),200 mg/kg CPs(CPs group)and 300 mg/kg YC(YC group)on the basis of the CE group,respectively.The sixth group was the corn-soybean meal diet group(corn group).The experiment lasted for 42 days.The results showed as follows:compared with the wheat group,the average daily feed intake of broilers at 36 to 42 days of age and 1 to 42 days of age in CE group were significantly decreased(P<0.05),whereas no significant effects of slaughtering performance,meat quality and plasma biochemical indices of broilers have found in CE group(P<0.05).Compared with the CE group,the breast muscle percentage of broilers in the ISO group,the CPs group and the YC group at 42 days of age were significantly increased(P<0.05),and the muscle drip loss and plasma MDA content(P<0.05)of the three groups were significantly decreased(P<0.05).Compared with the CE group,the body weight and slaughter rate of broilers at 42 days of age,the average daily gain of broilers at 36 to 42 days of age and 1 to 42 days of age in the CPs group were significantly increased(P<0.05),and the feed to gain ratio of broilers in the CPs group and the YC group at 1 to 42 days of age were significantly decreased(P<0.05).Compared with the corn group,the plasma MDA content,the b^(*) and shear force of the breast muscle the wheat-soybean meal diet group were significantly decreased(P<0.05),the pH2
