摘 要:根据不同生态区食用高粱的出米率、碎米率、精米率、籽粒长、籽粒宽、千粒重、总淀粉、粗脂肪和粗蛋白理化特性数据,进行高粱食用加工品质特性分析,为食用高粱品种选育提供技术参考。选用辽粘3号、辽糯11、辽杂37、辽杂82等4个高粱品种在全国10个不同生态区种植,成熟后收获测定出米率、碎米率、籽粒长宽比、千粒重、总淀粉、粗脂肪和粗蛋白等理化数据,分析不同品种品质特性的共同点、差异性、相关性。10个不同生态区中,朝阳种植的高粱出米率最高为76.12%,碎米率最低,为5.59%,平均精米率最高,为70.54%。4个品种中,辽粘3号的出米率最高,为71.63%;平均精米率最高,为59.17%。出米率与总淀粉显著相关,与千粒重极显著正相关,与脂肪极显著正相关。碎米率与粗蛋白极显著正相关,与总淀粉极显著负相关,与脂肪极显著负相关。精米率与总淀粉极显著正相关,与脂肪极显著正相关,与粗蛋白极显著负相关。从高粱加工品质角度分析,朝阳是高粱出米率高、碎米率低、精米率高的适宜生态区;辽粘3号是能够适应多个生态区的出米率高、精米率高的高粱品种。According to the data on the physical and chemical characteristics of edible sorghum in different ecological zones,the analysis of sorghum's edible processing quality was carried out based on the data on the milled rice rate,rice breakage rate,rice refinement rate,seed length,seed width,thousand kernel weight,total amylose,crude fat,and crude protein,so as to provide technical references for the selection and breeding of edible sorghum varieties.Four sorghum varieties,namely,Liao Viscous 3,Liao Glutinous 11,Liao Miscellaneous 37 and Liao Miscellaneous 82,were planted in 10 different ecological zones in China,and were harvested after maturity to determine the physicochemical data of the milled rice rate,rice breakage rate,kernel width/length ratio,1000-kernels weight,total amylose,crude fat and crude protein,etc.,and analyze the commonality,difference and correlation of the quality characteristics of the different varieties.Among the 10 different ecological zones,sorghum grown in Chaoyang had the highest milled rice rate of 76.12%,the lowest broken rice rate of 5.59%,and the highest average refined rice rate of 70.54%.Among the four varieties,Liao Sticky No.3 had the highest milled rice rate of 71.63%and the highest average refined rice rate of 59.17%.Milled rice rate was significantly correlated with total starch,highly significantly positively correlated with thousand grain weight,and highly significantly positively correlated with fat.The broken rice rate was significantly correlated with crude protein,negatively correlated with total starch and negatively correlated with fat.The rate of refined rice was significantly positively correlated with total starch,significantly positively correlated with fat,and significantly negatively correlated with crude protein.From the perspective of sorghum processing quality,Chaoyang is a suitable ecological zone for sorghum with high milled rice rate,low broken rice rate and high refined rice rate;Liao Viscose No.3 is a sorghum variety with high milled rice rate and high refi
