摘 要:桑叶是我国传统药食兼用性植物原料,富含蛋白和天然药用功能成分,具有极广阔的多元化开发利用前景。近年来,有关桑叶提取物的研究较多,为更好认识该领域的热点和趋势,本文针对2010-2024年间CNKI和WOS数据库中的相关文献进行计量分析。结果发现,该领域发文量近年来呈逐年上升趋势;关键词共现分析表明,目前国内外研究主要聚焦于桑叶成分提取、抗氧化活性及桑叶蛋白等方面,其中国际研究更多侧重于黄酮类化合物和1-脱氧野尻霉素;进一步的突显词分析表明,桑叶蛋白的发酵提取、桑叶提取物与肠道菌群的关系已成为当前研究的新方向;复合法提取桑叶蛋白占据主导。不同提取方法对提取物得率和生物活性有显著影响。本文既为未来桑叶提取物领域研究提供了重要参考依据,也为桑叶提取物在生物医药、食品营养等领域的应用奠定基础。Mulberry leaves are important raw materials for both pharmacy and food industry.It contains rich proteins and variety of medicinal ingredients,which weighs great value for diversifying utilization.Many studies focus on the mulberry leaf extract in recent years.To better understand the research hotspots and trends in this field,this paper conducted a bibliometric analysis based on the relevant literatures in CNKI and WOS databases from 2010 to 2024.Results showed that the relevant papers appeared in an upward trend in recent years.The current mulberry research mainly focused on the leaf extraction components,antioxidant activity and leaf protein,among which the abroad reported more on the flavonoids and 1-deoxynojirimycin.Co-occurrence analysis of Keywords verified that fermentation extraction of leaf protein,the roles of leaf extract on intestinal flora had become one kind of new research tendency.Compound method was indicated to be the dominant while the fermentation is the second.Different extraction methods affected significantly on both the yield and bioactivity of the extracts.This present systematical analysis provides not only beneficial guidance for the future research,but also for application of mulberry leaf extract in biomedicine,food nutrition and other fields.
