摘　　要：鱼粉是水产饲料中重要的优质蛋白源,具有蛋白质含量高、适口性好和抗营养因子少等优点。近年来,鱼粉资源短缺,价格上涨,寻找合适的蛋白源替代鱼粉对水产养殖业至关重要。动物性蛋白源具有蛋白质含量高、氨基酸组成均衡、来源广泛以及价格低廉的优点,是水产饲料中替代鱼粉的优质蛋白源。文章综述了动物性蛋白源的种类和特点及其在水产饲料中替代鱼粉的研究进展,并介绍了提高动物性蛋白源利用的措施,以期为水产饲料中鱼粉替代蛋白源的开发和应用提供参考。Fish meal is an important high-quality protein source in aquatic feed,which has the advantages of high protein content,good palatability and less anti-nutritional factors.In recent years,fish meal resources are in short supply and prices are rising,so finding suitable protein sources to replace fish meal is crucial for aquaculture industry.Animal protein sources have the advantages of high protein content,balanced amino acid composition,wide range of sources,and low price,which make them high-quality protein sources to replace fish meal in aquatic feed.In this paper,the types and characteristics of animal protein source and their research progress in replacing fish meal in aquatic feed were reviewed,and introduced measures to improve the utilization of animal protein sources,with a view to providing reference for the development and application of alternative protein sources to fish meal in aquatic feed.
