摘 要:为研究发酵杂交构树对奶山羊公羊生长性能、肉品质及肌纤维特性的影响,试验选取20只体况良好、体重接近的4月龄关中奶山羊公羊,随机平均分为2组,对照组饲喂基础日粮,发酵杂交构树组饲喂用发酵杂交构树替代基础日粮中10%苜蓿干草的试验日粮,试验期为60 d。结果显示:(1)两组试验羊之间全期总增重、平均日增重、平均日采食量及料重比差异均不显著(P>0.05)。(2)发酵杂交构树组肌肉剪切力显著低于对照组(P<0.05),下降了14.06%,熟肉率较对照组提高了10.11%(P<0.05)。(3)发酵杂交构树组羊肉中谷氨酸、天冬氨酸、脯氨酸、赖氨酸含量均显著高于对照组(P<0.05),分别提升了6.16%、4.41%、11.90%和4.92%,油酸、EPA含量分别提高了68.18%、48.44%,单不饱和脂肪酸和多不饱和脂肪酸的总量分别提高了26.27%和28.75%,差异均显著(P<0.05);(4)发酵杂交构树组肌纤维数量较对照组显著提高了20.46%(P<0.05),肌纤维平均面积显著降低了16.10%(P<0.05),肌纤维密度显著提高了19.11%(P<0.05)。综上所述,用含10%发酵杂交构树的饲粮饲喂奶山羊公羊不会影响其正常生长,同时能够提升羊肉品质和风味口感。In order to study the effects of fermented hybrid Broussonetia papyrifera on growth performance,meat quality and muscle fiber characteristics of male dairy goats,204-month-old male Guanzhong dairy goats with good body condition and similar body weight were randomly divided into 2 groups.The control group(group C)was fed a basal diet,and the fermented hybrid Broussonetia papyrifera group(group F)was fed a test diet in which fermented hybrid Broussonetia papyrifera was used to replace 10%alfalfa hay in the basal diet.The test period was 60 days.The results showed that:(1)There were no significant differences in total weight gain,average daily gain,average daily feed intake and feed-weight ratio between the two groups(P>0.05).The muscle shear force in the group F was significantly lower than that in the group C(P<0.05),it decreased by 14.06%,and the cooked meat rate increased by 10.11%compared with the group C(P<0.05).(3)The contents of Glu,Asp,Pro and Lys in the mutton of the group F were significantly higher than those in the group C,which increased by 6.16%,4.41%,11.90%and 4.92%,respectively.Oleic acid and EPA content increased by 68.18%,48.44%,and the total contents of monounsaturated fatty acids and polyunsaturated fatty acids increased respectively by 26.27%and 28.75%.All the differences were significant(P<0.05).(4)Compared with the group C,the number of muscle fiber in the group F increased significantly by 20.46%(P<0.05),the average area of muscle fiber decreased significantly by 16.10%(P<0.05),and the muscle fiber density increased by 19.11%(P<0.05).To sum up,feeding male dairy goats with 10%fermented hybrid Broussonetia papyrifera diets could not affect their normal growth,and could improve mutton quality and flavor taste.
