摘 要:研究稻谷不同粒型、水分、烘干方式对其加工品质的影响,从原粮品质的角度来提高加工过程中的大米质量,达到标准要求同时保证出米率。结果表明,短粒型粳稻谷在相同加工条件下比长粒型更不易留皮;水分含量更高的稻谷,其加工大米皮层更易去净;不同的烘干方式对于大米的出米率和整精米率影响显著,高温连续快速烘干后的稻谷更易碎,其出米率和整精米率更低,低温分段式烘干后的稻谷其出米率和整精米率更高,稻谷加工损耗更低。In recent years,the non grain transformation in Xiaoshan District has been promoted,and the planting area and yield of grain have significantly increased year by year.The japonica rice planted in our area is the main source of processed reserve rice.Good raw materials are the fundamental guarantee for processing qualified rice.However,there are many varieties of raw materials in our region with uneven grain types,and hybrid series varieties such as Yongyou and Chunyou are widely planted;The target moisture set by farmers when using a dryer to dry rice varies,and the moisture content of the rice varies after being dried by the dryer;Farmers use different drying methods to dry rice,and different drying methods have different impacts on rice processing.Therefore,this experiment will investigate the effects of different grain types,moisture content,and drying methods of rice on rice processing.From the perspective of raw grain quality,we will study how to improve the quality of rice during the processing,meet standard requirements,and ensure rice yield.
