椴树花量潜在蜜量及香气成分分析

摘  要:为探究吉林地区椴树种质资源,以紫椴和糠椴为对象进行椴树花、花量、花蜜的研究,分析椴树花与含糖量的相关性,以及通过气相色谱-质谱法研究椴树花、椴树蜜和椴树花发酵物的挥发性成分之间的相关性。结果表明,紫椴与糠椴树的花量和含糖量存在线性正相关,并根据花期观察发现花期28d主要被紫椴花覆盖,糠椴花期仅16d,潜在流蜜量(总糖含量)能够表征椴树花的流蜜能力;紫椴花挥发物发现40种化合物,糠椴花挥发物发现37种化合物,代表性香气成分均为苯乙醇;紫椴与糠椴花香型不同,但成分极其相似,且均与椴树蜜中的挥发物成分存在本质差异。In order to explore the germplasm resources of linden in Jilin region,we carried out studies on linden flowers,flower volume and nectar with Tilia amurensis Rupr and Tilia mandshurica Rupr,analyzed the correlation between linden flowers and sugar content,as well as studied the correlation between linden flowers,linden nectar,and volatile constituents of the linden flower fermentation by gas chromatography-mass spectrometry(GC-MS).The results showed that there was a linear positive correlation between the flower volume and sugar content of Tilia amurensis Rupr and Tilia mandshurica Rupr,and based on the observation of the flowering period,it was found that the flowering period of 28 d was mainly covered by the Tilia amurensis Rupr flowers,while the Tilia mandshurica Rupr flowering period was only 16 d.Potential nectar flow(total sugar content)was able to characterize the nectar flowing ability of linden flowers;40 compounds were found in the volatiles of Tilia amurensis Rupr flowers,and 37 compounds were found in the volatiles of Tilia mandshurica Rupr flowers,with phenylethanol being the representative aroma constituent;the fragrance types of Tilia amurensis Rupr and Tilia mandshurica Rupr flowers were different,but the Tilia amurensis Rupr and linden flowers have different aroma types,but their compositions are very similar,andboth are fundamentally different from the volatiles in linden honey.
