摘 要:皮克林高内相乳液(High internal phase Pickering emulsions,HIPPEs)是利用生物大分子和固体颗粒代替小分子表面活性剂且内相体积分数高于74%的新型乳液。植物蛋白营养价值高,基于植物蛋白的HIPPEs具有绿色、稳定等特点,应用范围广。文章介绍了植物蛋白基HIPPEs的基本特征和制备方式,并对其在多孔材料、递送载体、3D打印、绿色包装薄膜、脂肪替代物等方面的应用现状归纳总结,以期为后续研究与应用提供理论参考。High internal phase Pickering emulsions(HIPPEs)was a new type of emulsions that used biological macromolecules and solid particles to replace small molecular surfactants,and the volume fraction of internal phase was higher than 74%.Plant protein had high nutritional value,and HIPPEs based on plant protein had the characteristics of being green and stable,with a wide range of applications.The article introduced the basic characteristics,preparation methods,and summarized application status of plant protein based HIPPEs,including porous materials,delivery carriers,3D printing,green packaging films,fat substitutes,etc.,providing theoretical references for their subsequent research and application.
