摘  要:萝卜硫素(sulforaphane,SF)是脂肪族硫苷分支中萝卜硫苷经黑芥子酶水解生成的一类生物活性较高的次生代谢产物,主要分布在十字花科蔬菜作物中。SF具有防癌抗癌、抗氧化、抗炎症、解毒、预防心血管和糖尿病等多重功效,在功能性食品和保健品开发等方面具有可观的利用价值。近年来,围绕高含量SF种质资源选育和高效生产开展了一系列研究,有效地利用外源调控手段提高SF含量的栽培措施是目前常用策略。本文综述了SF的结构、理化性质及合成途径,重点讨论了不同调控方式(如环境因子、植物激素、外源物质等)对SF合成的影响及其作用机理,最后提出了现存问题及对未来研究方向的展望,旨在为十字花科蔬菜中高含量SF品种的优质栽培提供有益参考。Sulforaphane(SF)is a class of secondary metabolites with higher biological activity formed by hydrolysis of the aliphatic glucosinolate component-glucoraphanin catalyzed by myrosinases,which is mainly distributed in cruciferous vegetable crops.SF has anti-cancer,anti-oxidant,anti-inflammatory,detoxification,cardiovascular and diabetes prevention and other multiple effects,and has considerable utilization value in the development of functional foods and health care products.In recent years,researchers have carried out a series of work on the breeding and efficient production of high-content SF,and the cultivation measures that effectively use exogenous regulatory methods to mediate the synthesis of SF are commonly used strategies.In this paper,the structure,physicochemical properties and synthesis pathways of SF were reviewed,and the mechanism of mediation of SF synthesis by different regulatory modes(such as environmental factors,plant hormones,exogenous regulatory substances)was discussed.Finally,the existing problems and future research directions are proposed,aiming to provide some valuable references for the high-quality cultivation of high-content SF cruciferous vegetables cultivars.
