大豆发酵食品毛豆腐活性肽面膜的品质研究

摘  要:为促进大豆发酵食品毛豆腐的深层次开发,本实验制备毛豆腐活性肽面膜,探究其体外抗氧化、美白和抑菌功能,并进行产品的理化性质测定。实验结果表明:在面膜精华液中添加50%的多肽,对1,1-二苯基-2-苦肼基(1,1-Diphenyl-2-picrylhydrazyl,DPPH)和2,2′-联氮-双-3-乙基苯并噻唑啉-6-磺酸(2,2′-azino-bis[3-ethylbenzothiazoline-6-sulfonic acid],ABTS)的自由基清除率分别为68.46%和87.75%,酪氨酸酶的抑制率为57.11%;对枯草芽孢杆菌、绿脓杆菌、大肠杆菌和金黄色葡萄球菌均具有良好的抑菌效果。不同毛豆腐活性肽添加量的面膜的pH符合国家标准,水分活度在0.681~0.701之间,水分含量变化不显著。In order to promote the deep development of soybean fermented food,the active peptide mask was prepared to explore its in vitro antioxidant,whitening and antibacterial functions,and the physical and chemical properties of the product were determined.The experimental results showed that the free radical clearance rate of DPPH and ABTS was 68.46%and 87.75%respectively with adding 50%polypeptide,and the inhibition rate of tyrosinase was 57.11%.The active peptide mask of soybean fermented food hairy tofu was good antibacterial effect against Bacillus subtilis,Pseudomonas.aeruginosa,Escherichia coli and Staphylococcus aureus.The pH of the mask with different amount of active peptide added were complied with national standards,and the water activity were between 0.681 and 0.701,the change in moisture content was no significant.
