摘  要:[目的]探索一种适用于铁皮石斛干花工业化生产的最佳干燥方法。[方法]以铁皮石斛的花为研究材料,分别采用真空冷冻干燥、热泵干燥和热风干燥的方法对花进行处理后,通过感官评审、测定主要活性成分和微生物学卫生指标进行综合分析。[结果]通过综合评价,采用热泵干燥方法处理铁皮石斛鲜花,最佳的烘干程序为:首先经过45℃烘干24 h,然后以60℃继续烘干1 h,最后在130℃高温下快速烘干10 min。[结论]该流程能显著提升铁皮石斛干花的品质,非常适用于大规模工业化生产应用。[Obiective]To explore the optimal drying method suitable for the industrial production of dried flowers of Dendrobium officinale.[Method]Flowers of Dendrobium officinale were used as the research material and subjected to three drying methods:vacuum freeze drying,heat pump drying,and hot air drying.The dried flowers were then comprehensively analyzed through sensory evaluation,measurement of key pharmacologically active compounds,and assessment of microbiological hygiene indicators.[Result]Comprehensive evaluation revealed that the heat pump drying method,with a drying protocol of 24 hours at 45℃,followed by 1 hour at 60℃,and finally 10 minutes at 130℃,produced the highest quality dried flowers of Dendrobium officinale.[Conclusion]This drying method can significantly improve the quality of Dendrobium officinale dried flowers,and is very suitable for industrial-scale production.
