摘 要:为合理评价农垦稻区稻米食味、构建垦区稻米质量分级标准,以黑龙江、辽宁垦区84份水稻样品为材料进行了稻米食味分析。结果表明,香气、光泽、完整性、味道、口感、硬度、黏度、弹性及食味值这9个食味指标间存在差异,但也存在一定的相关关系。米饭香气、光泽、味道、口感、弹性、完整性这6个指标对米饭食味值的影响达到极显著水平,可以作为米饭食味的评价指标。辽宁垦区水稻样品的平均食味值较黑龙江垦区高出2.41分。依据米饭食味值可将84个样品分为4类:食味好样品、食味较好样品、食味较差样品、食味差样品,其中食味好、较好样品占比64.29%。In order to reasonably evaluate the taste of rice in reclamation areas and establish quality grading standards for rice in reclamation areas,84 rice samples from Heilongjiang and Liaoning reclamation areas were used as materials for rice taste analysis.The results indicated that there were differences among the nine taste indicators of aroma,luster,integrity,flavor,texture,hardness,viscosity,elasticity and taste value,but there was also a certain correlation.The six indicators of rice aroma,luster,flavor,texture,elasticity,and integrity have a significant impact on the taste value of rice,and can be used as evaluation indicators for rice taste.The average taste value of rice samples from Liaoning reclamation area was 2.41 points higher than that from Heilongjiang reclamation area.According to the taste value of rice,84 samples can be divided into four categories:samples with perfect taste,samples with good taste,samples with bad taste,and samples with horrible taste.Among them,samples with perfect taste and good taste account for 64.29%.
