摘 要:为研究大豆酶解蛋白替代豆粕对肉鸡生长性能、屠宰性能、肉品质、血清生化指标和抗氧化能力影响,试验选用1日龄体重相近、健康的爱拔益加雄性肉仔鸡336只,随机分成2组,每组7个重复,每个重复24只鸡。对照组饲喂基础日粮,试验组在基础日粮中添加5%大豆酶解蛋白替代豆粕,两组营养水平保持一致,试验期为40 d。结果显示:与对照组相比,大豆酶解蛋白组1~14日龄和1~40日龄肉鸡料重比显著升高(P<0.05);与对照组相比,大豆酶解蛋白组肉鸡屠宰率和半净膛率显著升高(P<0.05);与对照组相比,大豆酶解蛋白组14日龄肉鸡血清谷丙转氨酶和总胆固醇含量以及40日龄肉鸡尿素氮含量显著升高(P<0.05);与对照组相比,大豆酶解蛋白组40日龄肉鸡血浆总超氧化物歧化酶活性显著升高(P<0.05),谷胱甘肽过氧化物酶活性显著降低(P<0.05)。结果表明:饲粮添加5%大豆酶解蛋白替代豆粕对肉鸡出栏重无负面影响,但显著提高肉鸡料重比、屠宰率和抗氧化能力。The present study aimed to investigate the effects of adding soybean enzymatic hydrolysate protein to the diet instead of soybean meal on growth performance,slaughter performance,meat quality,serum biochemical indices,and antioxidant capacity of broiler chickens.Three hundred and thirty-six one-day-age healthy male Arbor Acres broilers with similar body weight were randomly divided into 2 groups with 7 replicates per group and 24 broilers per replicate.The control group was fed a basal diet and experimental group was fed a basal diet supplemented with 5%soybean enzymatic hydrolysate protein replacing soybean meal.The nutritional level of each group remained consistent and the feeding trial lasted for 40 days.The results showed that:Compared with the control group,the feed-to-gain ratio of 1 to 14 days age and 1 to 40 days age broilers in the soybean enzymatic hydrolysate protein group was significantly increased(P<0.05);The slaughter rate and half-eviscerated rate of broilers in the soybean enzymatic hydrolysate protein group were significantly increased(P<0.05);The serum alanine aminotransferase and total cholesterol levels of 14-day-age broilers and the urea nitrogen content of 40-day-age broilers in the soybean enzymatic hydrolysate protein group were significantly increased(P<0.05);The plasma total superoxide dismutase activity of 40-day-age broilers in the soybean enzymatic hydrolysate protein group was significantly increased(P<0.05),while the glutathione peroxidase activity was significantly decreased(P<0.05).It was suggested that under the experimental conditions,adding 5%soybean enzymatic hydrolysate protein to the diet instead of soybean meal had no negative effect on the slaughter weight of broilers,but could significantly improve the feed-to-gain ratio,slaughter rate and antioxidant capacity of broilers.
