基于COMSOL的射频与热风联合干燥条件下枣片质热传递耦合模型的建立与验证

摘  要:为了揭示射频热处理对热风干燥效果的影响机理和枣片在干燥过程中水分与热量的动态变化。先通过对单一热风干燥(HA)及施加射频热处理的热风干燥(HA+RF)质热传递过程的理论分析,推导和建立了质热传递数学模型,确立了质热传递模型求解所需参数的数学表征;然后利用COMSOL多物理场仿真软件对HA和HA+RF条件下枣片的质热传递过程进行有限元模拟仿真与分析,并进行了试验验证。结果表明:中心温度模拟值与试验值最大相差6.90℃,最小为0.01℃;表面温度模拟值与试验值最大相差1.77℃,最小相差0.30℃;HA和HA+RF枣片含水率模拟值与试验值相关系数R~2分别为0.986、0.991,模拟结果与试验结果有较好的一致性,可为枣片干燥均匀性的研究及射频施加机制优选提供模型基础。To investigate the mechanism of RF treatment on the drying effect of hot air and to elucidate the dynamic changes in moisture and heat within jujube slices during the drying process.Based on the theoretical analysis of the mass heat transfer process of single hot air drying(HA)and hot air drying(HA+RF)with RF heat treatment,the mathematical model of mass heat transfer was developed,and the mathematical characterization of the parameters required for solving the mass heat transfer model was established.Then COMSOL multi-physical field simulation software was used to simulate and analyze the mass and heat transfer process of jujube sheet under HA and HA+RF conditions.And relevant experiments were conducted.The results indicated that the maximum and minimum differences between the simulated and experimental central temperature values were 6.90℃and 0.01℃,respectively.The maximum and minimum differences between the simulated and experimental surface temperature values were 1.77℃and 0.30℃,respectively.The correlation coefficients R2 between the simulated and experimental values of water content of HA and HA+RF jujube slices were 0.986 and 0.991,respectively.The simulated results are in good agreement with the experimental results,which provide a model basis for the study of drying uniformity of jujube slices and the optimization of RF application mechanism.
