摘  要:本研究采用广域照射拉曼光谱技术与簇类独立软模式法,结合多元散射校正、光谱仪降噪和波长标定降噪技术,建立了猪、牛、羊、鸡和鸭5种动物生鲜肉类的定性识别模型。结果显示,经多元散射校正、光谱仪降噪和波长标定降噪技术处理后,5种动物肉类之间分析结果具有明显的聚类趋势,在此基础上建立了5种肉类定性分类模型,对不同产地的455份原料肉样品种属进行定性鉴别,可以在3 min内快速鉴定5种动物肉类脂类成分,平均准确率达到90%以上。结果表明,拉曼光谱分析技术结合有效的数据前处理方法可对猪、牛、羊、鸭和鸡肉种属进行鉴别,与常规方法相比,检测过程简便、快速,且无损伤,适用于口岸动物肉类种属的快速无损鉴别。This study used wide-field illumination Raman spectroscopy technology combined with cluster-independent soft pattern method,along with multiple scattering correction,spectrometer noise reduction,and wavelength calibration noise reduction techniques,to establish a qualitative identification model for five types of fresh meat from pigs,cattle,sheep,chickens,and ducks.The results showed that after treatment with multiple scattering correction,spectrometer noise reduction,and wavelength calibration noise reduction,there was a clear clustering trend in the analysis results between the five types of animal meat.Based on this,a qualitative classification model for the five types of meat was established,which could rapidly identify the species of 455 raw meat samples from different origins within 3 minutes,with an average accuracy rate of over 90%.The results indicate that Raman spectroscopy analysis technology,combined with effective data preprocessing methods,can be used for the identification of the species of pork,beef,mutton,duck,and chicken meat.Compared with conventional methods,the detection process is simple,fast,and non-destructive,suitable for rapid and non-destructive identification of animal meat species at ports.
