摘 要:试验旨在研究不同饲养条件对川西北草地藏系绵羊生长性能、屠宰性能和肉品质的影响。试验选取体重相近(18.50±3.62)kg、健康状况良好的断奶(4月龄)藏系绵羊60只,称重、测量主要体尺指标、耳牌编号标记后随机分为2个组,每组3个重复,每个重复10只羊,自然放牧组采用全天放牧,不补食,放牧+补饲组采用全天放牧,每天补饲精料补充料2次,试验期间两组实行同等条件下放牧管理,试验时间为120 d。结果表明:(1)放牧+补饲组胴体重、屠宰率、净肉重和净肉率极显著高于自然放牧组(P<0.01),放牧+补饲组中期重、平均日增重、宰前活重和体高显著高于自然放牧组(P<0.05),放牧+补饲组眼肌面积显著高于自然放牧组(P<0.05)。(2)放牧+补饲组羊肉中粗脂肪含量显著高于自然放牧组(P<0.05),放牧+补饲组羊肉中亮氨酸、苯丙氨酸、谷氨酸、酪氨酸和精氨酸的含量显著高于自然放牧组(P<0.05),放牧+补饲组羊肉中十烷酸、十二碳酸和油酸的含量显著高于自然放牧组(P<0.05),放牧+补饲组羊肉中总单不饱脂肪酸和总脂肪酸含量极显著高于自然放牧组(P<0.01),放牧+补饲组羊肉中镁含量极显著高于自然放牧组(P<0.01),放牧+补饲组羊肉中钙、磷和锰含量显著高于自然放牧组(P<0.05)。由此可见,在放牧加适当补饲精料补充料的饲养条件下,能显著提高川西北草地藏系绵羊的生长性能、屠宰性能和肉品质。The current study aimed to evaluate the effects of different farming system on growth performance,slaughter performance,and mutton quality of Tibetan sheep in the Northwest Plateau of Sichuan.A total of sixty healthy weaned Tibetan sheep(4-month old)with similar body weight(18.50±3.62)were weighed,measured for body dimension,ear-tagged,and randomly assigned to two groups(3 replication pens/group,10 sheep/replication pen).Group I adopted natural grazing for 24-h,with no supplement;whereas Group II was supplemented with concentrate feed twice a day in addition to the natural grazing.All sheep were raised under the same management routines for 120 days.The results showed that 1)Group II achieved significantly higher carcass weight,slaughter rate,net meat weight and net meat rate than Group I(P<0.01).Also,Group II exhibited larger metaphase weight,average daily weight gain,live-weight before slaughter,and bogy height(P<0.05),and so was the ocular muscle area(P<0.05).2)The crude fat content in mutton of Group II was remarkably higher than in Group I(P<0.05),so was the contents of leucine,phenylalanine,glutamic acid,tyrosine,arginine,decanoic acid,lauric acid and oleic acid(P<0.05).The decanoic acid,dodecanoic acid and oleic acid contents in Group II were also significantly higher than that of Group I(P<0.05).The contents of total monounsaturated fatty acid,total fatty acid,and magnesium were all extremely higher than Group I(P<0.01),that of calcium,phosphorus,and manganese were significantly higher than Group I(P<0.05).In conclusion,the farming system of natural grazing+concentrate supplementation can significantly improve the growth performance,slaughter performance and mutton quality of Tibetan sheep raised in Northwest Plateau of Sichuan.
