摘 要:为探索安康产地鱼类硒含量及其硒来源,以促进安康市富硒渔业和富硒食品的发展,本研究采集了安康市恒口示范区、岚皋县、镇坪县以及旬阳县水产养殖区主要养殖鱼类样品44份、野生鱼类样品2份、水产饲料样品14份及水样9份,同时采集了宝鸡等非安康地区的鱼类样品7份,并对部分鱼类肌肉样品进行炒制或腌制等加工方法制作成水产熟食样品,通过对以上样品进行硒含量检测与对比分析,结果发现:(1)鱼类肌肉硒含量范围在0.040~0.560 mg/kg之间,平均硒含量为0.217 mg/kg,94.3%的鱼体肌肉硒含量符合陕西省富硒水产品(鲜)标准(0.080 mgSe/kg),属富硒鱼;(2)安康地区红鳍原鲌等野生肉食性鱼类以及鲢鳙等滤食性鱼类肌肉硒含量显著高于配合饲料养殖的鲤及草鱼等鱼类(P<0.05);(3)安康产地的鳙,其肌肉硒含量(0.356±0.089 mg/kg)显著高于非安康地区鳙肌肉硒含量(0.113±0.067 mg/kg)(P<0.05);(4)不同组织器官的硒含量从高到低依次为肝(胰)脏(1.500~2.850 mg/kg)>肠(及内容物)(0.230~0.780 mg/kg)>肌肉(0.040~0.560 mg/kg);(5)腌制肉松的硒含量在0.070~0.460 mg/kg之间,腌制肉干的硒含量在0.080~0.900 mg/kg之间,83%的鱼肉熟食制品硒含量符合陕西省水产制品富硒标准(硒含量≥0.150 mg/kg);(6)养殖水及藻类浓缩液硒含量在0.000~0.010 mg/L之间,平均硒含量为0.005 mg/L,远低于陕西省水体富硒标准(硒含量0.01~0.05 mg/L);(7)配合饲料硒含量在0.520~1.720 mg/kg之间,符合陕西省配合饲料富硒标准(硒含量≥0.100 mg/kg)。综上所述,安康市产地鱼类硒含量较高,鱼体丰富的硒含量主要来自当地富硒的地理条件及配合饲料中添加的硒,同时,水产品的熟化能进一步提升鱼肉硒含量。To explore the selenium concentration in fish of Ankang origin and the sources of selenium,and to promote the development of selenium-rich fishery and selenium-rich food in Ankang,this study mainly collected 44 samples of cultured fishes,2 samples of wild fishes,14 samples of aquatic feeds and 9 water samples from the aquaculture areas in Hengkou Demonstration Area,Langao County,Zhenping County and Xunyang County of Ankang.Additionally,7 samples of fishes from other cities such as Baoji were collected,and some of the collected fishes were processed using cooking or pickling methods to create prepared samples which were tested for selenium concentration and comparative analysis.The results showed(1)the selenium concentrations in muscles of all fishes ranged from 0.040~0.560 mg/kg,with an average selenium concentration of 0.217 mg/kg.Approximately 94.3%of the fish samples met the standard for selenium-rich fresh aquatic products(0.080 mgSe/kg)in Shaanxi Province,indicating that they can be classified as selenium-rich fish.(2)Wild carnivorous fish such as redfin culter in Ankang region,as well as filter-feeding fish such as grass carp and silver carp,have significantly higher selenium concentrations in their muscles compared to the cultured fish fed with compound feed(P<0.05).(3)The selenium concentrations in muscle(0.356±0.089 mg/kg)of bighead carp in Ankang area were significantly higher than those(0.113±0.067 mg/kg)in non-Ankang area(P<0.05).(4)The selenium concentration in different tissues and organs ranked from highest to lowest as liver(pancreas)(1.500~2.850 mgSe/kg)>intestinal(and contents)(0.230~0.780 mgSe/kg)>muscle(0.040~0.560 mgSe/kg).(5)The selenium concentration in pickled fish floss ranged from 0.070 to 0.460 mg/kg and in dried fish jerky from 0.080 to 0.900 mg/kg,with 83%of the processed products meeting the selenium-rich standard for aquatic products(0.150 mgSe/kg)in Shaanxi Province.(6)The selenium concentrations in the water and algae concentrates ranged from 0.000 to 0.010 mg/L,with an average
