摘 要:本文研究粉碎处理对玉米花粉粉体的影响。使用高速粉碎机将花粉粉碎,通过标准筛得到不同粒径的花粉,对不同粒径花粉的物理特性(表面形貌、流动性、可压性)及多酚溶出量、多糖溶出量、抗氧化能力进行了研究。并结合扫描电子显微镜分析进行直观说明。结果表明,花粉经过粉碎处理后,花粉的振实密度和松密度随粒径的减小不断下降,而休止角不断增加,且差异性显著。粉碎度为M250的样品的多酚溶出量、多糖溶出量和抗氧化能力显著高于其他样品(P<0.05)。与活性物质含量与抗氧化能力最低的M50样品相比,M250样品中总多酚含量和多糖含量分别提高了30.7%和21.1%,清除羟自由基(·OH)的能力提高了136.12%;清除DPPH自由基的能力提高了270.12%。说明适当粉碎可以提高粉体的活性物质溶出量和抗氧化能力。本试验为不同粒径花粉在加工产业的实际应用提供了理论依据。This study investigates the eff ects of milling on the corn pollen powder.The pollen was milled using a highspeed mill and sieved through standard sieves to obtain pollen of diff erent sizes.The physical properties(surface morphology,fl uidity,compressibility),polyphenol and polysaccharide extraction rates,and antioxidant capacity of the diff erent-sized pollen were studied,and the results were illustrated using scanning electron microscopy.The results show that after milling,the bulk density and loose density of the pollen decreased with decreasing particle size,while the angle of repose increased,and the differences were significant.The polyphenol extraction rate,polysaccharide extraction rate,and antioxidant capacity of the sample milled to M250 were signifi cantly higher than those of the other samples(P<0.05).Compared with the 50M sample with the lowest active substance content and antioxidant capacity,the total polyphenol content and polysaccharide content of the 250M sample increased by 30.7%and 21.1%,respectively,and the ability to remove hydroxyl radicals(·OH)increased by 136.12%,while the ability to remove DPPH radicals increased by 270.12%.This study provides theoretical support for the actual application of pollen of diff erent sizes in processing industries.
