摘 要:为建立草莓果实品质评价体系,采取“观察品尝+评测打分”及检测果实部分品质的方式,开展果实硬度、畸形果率、果大小、果色泽均匀度、果肉软脆、果汁量、果香味淡浓、果酸甜度指标的测评及果实硬度、糖酸比指标的检测作业,对玉溪市14个主栽草莓品种果实品质进行评价;同时,运用灰色关联度分析法对评价总分值与测评指标关联性进行分析。结果表明,从草莓果实测评指标中看,硬性指标(畸形果率、果色泽均匀度、果实硬度、果大小)比软性指标(果肉软脆度、果汁量、果香味淡浓、果酸甜度)评价更好,且变异系数较小;从测评指标与检测指标对比分析看,草莓果实硬度和果酸甜度的测评值与检测值之间存在差异,且不同品种间测评值差异较小;不同草莓品种之间果实品质差异明显,以圣诞红、越秀、隋珠、梦之莹、章姬综合表现较好,粉玉、妙香7号、梦帅、京泉香、建德红次之;草莓果实品质评价总分值以果肉软脆度、果酸甜度、果香味淡浓、畸形果率、果实硬度的关联性较高,提高其分值权重更能反映草莓品质水平。In order to establish a strawberry fruit quality evaluation system,the“observation and tasting+evaluation scoring”and partial qual-ity testing method was adopted to evaluate the fruit hardness,deformity rate,fruit size,fruit color uniformity,softness and crispness of fruit flesh,juice volume,light and strong fruit aroma,fruit sour-sweet degree,as well as fruit hardness and sugar-acid ratio indicators.The fruit quality of 14 main strawberry varieties planted in Yuxi City was evaluated.At the same time,the grey relational analysis method was used to analyze the correlation between the total evaluation score and the evaluation indicators.The results showed that from the evaluation indicators of strawberry fruit,the hard indicators(abnormal fruit rate,fruit color uniformity,fruit hardness,fruit size)were better evaluated than the soft indicators(softness and crispness of fruit flesh,juice volume,light and strong fruit aroma,fruit sour-sweet degree),and the coefficient of var-iation was smaller.From the comparison analysis of evaluation indicators and detection indicators,there were differences between the evaluation values and detection values of strawberry fruit hardness and sour-sweet degree,and the differences in evaluation values between different varie-ties were relatively small.There were significant differences in fruit quality among different strawberry varieties,with Santa’s red,Yuexiu,Suizhu,Mengzhiying and Zhangji performing better overall,followed by Fenyu,Miaoxiang No.7,Mengshuai,Jingquanxiang and Jiande Red.The total score of strawberry fruit quality evaluation was highly correlated with the softness and crispness of fruit flesh,light and strong fruit a-roma,fruit sour-sweet degree,abnormal fruit rate and fruit hardness deformed fruit and fruit hardness.Improving the score weight could better reflect the quality level of strawberry.
