摘 要:为研究不同组织结构烟叶的柔软性及其关键品质指标差异,阐明烟叶组织结构与品质的关联性,本文以‘云烟87’为材料,采用相关性分析、曲线拟合和随机森林模型等方法,综合分析了不同组织结构与烟叶关键品质指标的关联性。结果表明:随着组织结构趋于紧密,烟叶柔软度值显著增加,总糖和还原糖含量降低,淀粉、烟碱和总氮含量呈不同程度的增加,烟叶化学成分协调性降低;烟叶多酚总量随组织结构的致密程度增大而呈上升规律。烟叶组织结构越疏松,感官评吸质量越好,主要体现在香气质、香气量、吃味和杂气等方面。To explore the differences in softness and key quality indicators of tobacco leaves with different organizational structures,and to clarify the association between tobacco leaf organizational structure and its quality,‘Yunyan 87’in this paper was as the material,to comprehensively analyze the association between key indicators among tobacco leaves and different organizational structures based on correlation analysis,curve fitting,and random forest models.The results indicated that as the organizational structure became denser,the softness value of tobacco leaves significantly increased,while the content of total sugar and reducing sugar correspondingly decreased.The starch,nicotine,and total nitrogen levels increased to varying extents,and the coordination among chemical components in the tobacco leaves decreased.The total amount of polyphenols in the tobacco leaves showed an increasing trend with the density of tissue structure.The looser the organizational structure of tobacco leaves,the better the sensory smoking quality,which is mainly reflected in the aroma quality,aroma intensity,taste,and miscellaneous gas aspects.
