创意城市视域下潮州非物质文化遗产的活化传承路径——以非遗潮州菜为例

摘　　要：2023年10月,潮州市成功获得联合国教科文组织创意城市网络“世界美食之都”称号。在“创都”过程中,潮州市对非遗潮州菜的保护和传承充分融入“创意城市”发展理念。该文以创意城市与创意城市网络理念为指导,提出通过保护民间美食活力、构建完备的非遗潮州菜保护体系和完整的非遗潮州菜教育体系形成人才洼地;通过打造餐饮业金字招牌、食品生产加工产业集群和培养预制菜产业形成美食产业集聚;通过举办非遗潮州菜系列品牌宣传活动、发挥侨元素打造交流平台、形成鼓励支持的政策体系打造宽容环境;从人才保护培育、非遗产业发展与营造支持环境三方面为非物质文化遗产的活化传承提供可持续发展的参考路径。In October 2023,Chaozhou City was awarded the title of"Creative Cities of Gastronomy"by UNESCO.Towards it,the protection and inheritance of Chaozhou cuisine is fully integrated into the development concept of"Creative City".Guided by the concept of creative city and creative city network,this paper proposes to form a talent pool by protecting the vitality of folk cuisine,constructing a complete protection system for the intangible cultural heritage-Chaozhou cuisine and a complete education system for Chaozhou cuisine;form a culinary industrial clusters by building flagship projects in catering industry,food production and processing industry clusters and cultivating the pre-prepared food industry;create a tolerant environment by organizing a series of advertising campaigns for Chaozhou cuisine,giving full play to the element of Chinese diaspora to provide a platform of exchange and providing a system of supportive policies.From the above three aspects-the talent protection and cultivation,the development of intangible cultural heritage industry and support of the environment,they can guide a sustainable development for the revitalization of intangible cultural heritage.
