摘  要:随着人工智能等新技术的发展,食材智能预处理技术、菜肴智能烹饪加工技术、菜肴烹饪后智能处理技术和消费终端的智能应用等在餐饮业中逐步推广。同时,烹饪教育行业也相继开发出了虚拟现实技术、烹饪智能技术一体化的实训场所和众多烹饪智能教具等智能化设备。智能技术的交叉发展拉近了校企距离,可以打造“产学研培创”五位一体育人模式,实现产业和教育的完美融合。现代化智能设备的运用,能适应现代化智能餐饮的岗位需求,促进教育教学转型,实现真正的高职院校智能教育。本文概述智能技术在餐饮业及烹饪教育中的研究进展,以供参考。With the development of new technologies such as artificial intelligence,intelligent pretreatment technology for ingredients,intelligent cooking and processing technology for dishes,intelligent processing technology for dishes after cooking,and intelligent application of consumer terminals have been gradually applied in the catering industry.At the same time,the culinary education industry has also successively developed intelligent equipment such as virtual reality technology,integrated training places for cooking intelligent technology,and many cooking intelligent teaching aids.The cross-development of intelligent technology has shortened the distance between schools and enterprises,and can create a five-in-one education model of“production,education,research,training and innovation”to achieve the perfect integration of industry and education.The application of modern intelligent equipment can adapt to the job needs of modern intelligent catering,promote the transformation of education and teaching,and realize the real intelligent education of higher vocational colleges.This article provides an overview of the research progress of smart technology in the catering industry and culinary education for reference.
