摘 要:本试验旨在研究不同品系育成期德州驴生长性能、血清生化指标、屠宰性能和肉品质的差异。采用单因素随机试验设计,选取11月龄、体重为(185±3)kg的健康雄性德州驴20头,分为三粉驴和乌头驴2个组,每组10个重复,每个重复1头驴。2组均饲喂饲粮组成和营养水平相同的颗粒状全混合日粮(TMR)。预试期14 d,正试期86 d。结果表明:1)乌头驴的平均日增重和增重效益均极显著高于三粉驴(P<0.01),料重比极显著低于三粉驴(P<0.01)。2)不同品系育成期德州驴血清谷丙转氨酶、谷草转氨酶、碱性磷酸酶、肌酸肌酶、乳酸脱氢酶活性和总蛋白、白蛋白、尿素、尿酸、葡萄糖、甘油三酯、总胆固醇、高密度脂蛋白、低密度脂蛋白、钙、磷含量均无显著差异(P>0.05)。3)不同品系育成期德州驴胴体重、屠宰率、净肉重、净肉率、皮重、皮重率和屠宰效益均无显著差异(P>0.05)。4)不同品系育成期德州驴背最长肌滴水损失、蒸煮损失、剪切力、肉色(亮度、红度和黄度值)和pH均无显著差异(P>0.05),背最长肌干物质、粗蛋白质、粗脂肪、粗灰分和有机物含量均无显著差异(P>0.05)。综上所述,育成期乌头驴的平均日增重、料重比和增重效益极显著优于三粉驴,不同品系德州驴血清生化指标、屠宰性能和肉品质无显著差异。The purpose of this experiment was to study the differences of growth performance,serum biochemical indexes,slaughter performance and meat quality of different strains of Dezhou donkeys.A single factor randomized experimental design was adopted,twenty 11-month-old healthy male Dezhou donkeys with body weigh of(185±3)kg were selected and divided into 2 groups:Sanfen donkeys and Wutou donkeys,with 10 replicates in each group and 1 donkey in each replicate.Donkeys in 2 groups were fed a granular total mixed ration(TMR)with the same dietary composition and nutrient levels.The pre-experimental period lasted for 14 days,and the experimental period lasted for 86 days.The results showed as follows:1)the average daily gain and gain benefit of Wutou donkeys were significantly higher than those of Sanfen donkeys(P<0.01),and the feed to gain ratio was significantly lower than that of Sanfen donkeys(P<0.01).2)There were no significant differences in lanine transaminase,aspartate transaminase,alkaline phosphatase,creatine kinase,lactate dehydrogenase activities and total protein,albumin,urea,uric acid,glucose,triglycerides,total cholesterol,high-density lipoprotein,low-density lipoprotein,calcium,phosphorus contents in serum between different strains of Dezhou donkeys(P>0.05).3)There were no significant differences in carcass weight,slaughtering percentage,net meat weight,net meat rate,fur weight,fur weight rate and slaughtering benefit between different strains of Dezhou donkeys(P>0.05).4)There were no significant differences in dripping loss,cooking loss,shearing force,meat color(brightness,redness and yellowness values)and pH during in longissimus dorsi between different strains of Dezhou donkeys(P>0.05),and there were no significant differences in dry matter,crude protein,crude fat,crude ash and organic matter in longissimus dorsi(P>0.05).To sum up,the average daily gain,feed to gain ratio and gain benefit of Wutou donkeys during growing period are significantly better than those of Sanfen donkeys,and there are no signifi
