乌旦塔拉元宝枫种仁营养成分及其含量特征

摘　　要：元宝枫是我国特有木本油料树种,而乌旦塔拉元宝枫种仁脂肪酸和维生素等营养成分研究未开展系统测定。本研究在2020~2021,对乌旦塔拉自然保护区划定的元宝枫单株种仁进行取样,结合一系列室内抽提分析法,对其脂肪酸含量及种类、维生素和甾醇类含量进行测定。结果表明:乌旦塔拉自然保护区元宝枫种仁油脂平均含量为41.56%;在脂肪酸组成中,亚油酸平均含量为34.76%,油酸平均含量为24.09%,神经酸平均含量为5.94%;元宝枫种仁中维生素E总含量平均为87.12 mg/100 g、甾醇类物质总含量平均为867.42 mg/kg、角鲨烯平均含量为137.21 mg/kg。乌旦塔拉自然保护区元宝枫具有高含油、高神经酸、高维生素E、高植物甾醇、高角鲨烯等特征,具有较高开发利用价值。Acer truncatum is a woody oil tree species unique to China.However,systematic determination of the nutritional components such as fatty acids and vitamins in the kernel of Acer truncatum from Wudan Tara has not been conducted.In this study,during the two years from 2020 to 2021,the kernels of individual Acer truncatum trees in the Wudan Tara Nature Reserve were collected.Combined with a series of indoor extraction and analysis methods,the contents and types of fatty acids,vitamins,and sterols were tested.The results indicated that the average oil content in the kernels of Acer truncatum in the Wudan Tara Nature Reserve is 41.56%.Among the fatty acid composition,the average content of linoleic acid,oleic acid,and nervonic acid is 34.76%,24.09%and 5.94%,respectively.The average total content of vitamin E in the kernels of Acer truncatum was 87.12 mg/100g,the average total content of sterols is 867.42 mg/kg,and theaverage content of squalene is 137.21 mg/kg. Acer truncatum in the Wudan Tara Nature Reserve possesses features such as high oil content, high nervonic acid content, high vitamin E content, high phytosterol content, and high squalene content, thereby presenting a considerable value for exploitation and utilization.
