油烟机形式和布局对开放式厨房空气品质的影响

摘  要:厨房油烟是室内空气污染的主要来源之一,针对当前开放式厨房油烟扩散易造成整个室内环境污染的问题,利用CFD软件对开放式厨房油烟的扩散情况进行数值模拟。通过分析多种工况下烹饪油烟代表物CO_(2)的扩散规律,探究油烟机形式、油烟机布局朝向及是否开窗通风对厨房内污染物扩散的影响,得出控制开放式厨房油烟污染物的最佳方式。结果表明:相同工况下,顶吸式油烟机净化室内污染物所需排风量较侧吸式油烟机少43%左右,且油烟机朝墙布置比朝窗布置的排烟效果更好;在关窗通风条件下,油烟机朝墙布置下的室内局部CO_(2)体积分数虽比朝窗布置略高,但高CO_(2)体积分数区域范围明显比朝窗布置小。论文研究成果仅为开放式厨房油烟机选型及布置提供参考。Kitchen fumes are one of the main sources of indoor air pollution,and because the indoor environment of the current open kitchen was easily polluted by fume diffusion,the CFD software was used to numerically simulate the fume diffusion of open kitchen.By analyzing the diffusion law of CO_(2),a kind of representative cooking fumes under a variety of working conditions,and exploring the influence of hood form,hood layout orientation and whether to open windows for ventilation on the diffusion of pollutants in the kitchen,the best way to control fume pollutants in open kitchen was obtained.The results showed that under the same working conditions,the exhaust air volume required by the top-suction range hood to purify indoor pollutants was about 43%smaller than the side-suction range hood,and the exhaust effect of the range hood facing the wall was better than that facing the window.Under the condition of ventilation with the window closed,although the CO_(2) volume fraction of indoor local pollutants under the lampblack machine facing the wall was slightly higher than that facing the window,the range of high CO_(2) volume fraction area was smaller than that facing the window.The research results only provided a reference for the selection and layout of range hood in open kitchen.
