摘　　要：猴头菇作为药食两用菌,具有保护胃肠、提高免疫、营养神经等多种生物活性。其主要的生物活性来源于猴头菇多糖、猴头菇萜、猴头菇多酚、猴头菇黄酮,以及蛋白质、多肽、氨基酸等。针对其生物活性及提取工艺进行综述,以期为猴头菇的进一步开发利用提供参考。As a drug and food bacteria,Hericium erinacens has many biological activities such as gastrointestinal protection,immune enhancement and neuronutrition.Its main biological activities are derived from ericius officinalis polysaccharide,ericius officinalis terpenes,ericius officinalis polyphenols,ericius officinalis flavones,proteins,peptides,amino acids and so on.In this paper,the biological activity and extraction process of the compounds were reviewed,to provide reference for the further development and utilization of Hericium erinaceus.
