美乐瘦身果饮制备工艺及其瘦身功效的初步研究

摘　　要：本文旨在优化美乐瘦身果饮的制备工艺参数并对其瘦身功效进行初步评判。试验采用单因素试验法和正交试验法,确定原材料提取方法以及果饮提取液的浓缩比例、加入防腐剂量和稳定剂量;通过30名志愿者为期6个月的观察以及初始、服用期结束和停服期结束3个时间点各志愿者总得分变化趋势及其统计学分析结果,各志愿者得分总和主要来源于体重、BMI值、体脂率、体水分率和内脏脂肪等级5个指标的变化,明确果饮瘦身功效。果饮最佳生产工艺参数为原材料加入8倍体积水,中火煎煮30min,煎煮2次;浓缩体积比例为1:7,加入0.1%的防腐剂和0.15%的稳定剂。结果表明,从初始到服用期结束,各志愿者得分总和呈现明显上升趋势,服用期结束到停服期结束,各志愿者得分总和呈现缓缓上升趋势,表明美乐瘦身果饮具有一定健康瘦身功效,停止服用不会出现反复现象;统计学结果表明,上述指标变化与服用美乐瘦身果饮存在显著关系,服用美乐瘦身果饮起到一定的瘦身减脂功效。美乐瘦身果饮口感醇厚,色泽悦人,状态稳定,具有天然纯正的果香,同时在瘦身方面具有一定作用,市场前景广阔。To optimize the preparation for technical parameter of Meile slimming fruit drink and further judgement of its weigh loss effect.Use single factor experiment and orthogonal test experiment methods,confirm extraction process of fruit drink raw materials and its con-centration radio of the extract,add anti-corrosion and steady dose;Through the observation of 30 volunteers for six months and the total score of each volunteer change trend of the scores and the statistical results at the initial,the end of the taking period and the end of the with-drawal period,the increase of volunteer scores was mainly due to the changes of body weight,BMI,fat percentage,body moisture ratio and visceral fat grade,the slimming effect of the fruit drink was determined.Optimum technological parameters of fruit drink.The raw materials is extracted twice by adding eight times the amount of water 30 min each time,concentration radio is 1:7,add 0.1%preservative and 0.15%stabilize.The results showed that from the initial period to the end of the treatent period,the total scores of the volunteers showed an obvious increasing trend,the end of the taking period to the end of the withdrawal period,the total scores of the volunteers showed a very slow rising trend.which shows that without slimming fruit drink has certain healthy slimming effect at the same time stop taking will not appear repe-ated phenomenon;the statistical results showed that there was a significant relationship between the changes of the above indexes and the consumption of Meile slimming fruit drink,the beauty of taking Meile slimming fruit drink has certain slinning ang fat reduction effect.The prepared Meile slimming fruit drink has mellow taste,attractive color and stable state with natural pure fruit flavor,at the same time in the slimming aspect has a certain role and the market prospects are broad.
